Sunflower Microgreen Pesto

Ingredients
- Sunflower microgreens – 2 cups
- Almonds – 1/2 cup (chopped)
- Olive oil – 6 tbsp
- Lemon juice – from 1/2 a lemon
- Salt and pepper as per taste
Directions
- Add the microgreens, almonds and olive oil into a mixer and grind to a smooth paste.
- To this, add the lemon juice, salt and pepper as per taste and mix well.
- Keep this refrigerated till ready to use.
- Serve this as a side with toasted bread or mix it up with boiled pasta to make a delicious pesto pasta.
